Summer is officially over now that it is the 1st day of October and for me, that is when Autumn truly begins.  And while Pumpkin spice everything has been floating around for the past month now.  I am still not ready to have pumpkin pie or pumpkin spice lattes just yet.

 

That is why I am sharing with you one of my favorite autumn recipes.  I made this last Autumn when I had a few apples that were going bad.  I didn’t want to throw them out so I sliced them up for a quick afternoon treat.  That is how my Rustic Autumn Apple Tart came to life.  The ingredients are simple and easy – most of these you probably already have on hand so you know exactly what’s going into your apple tart. I like having mine for breakfast with a little dollop of fresh whip cream and coffee.  The kids enjoy theirs with a scoop of ice cream for dessert.

 

 

Ingredients:

3 tablespoons unsalted butter

3 tablespoons of sugar

3 tablespoons of cinnamon

1 quick and easy puff pastry you can make your own or you can substitute a store-bought puff pastry of choice.  (Thaw if frozen)

3 small apples

1 pinch of salt

 

Prep Time: 15 mins

Cook Time: 30 Mins

Total Time: 45mins

Instructions:

  1. Preheat oven to 350F
  2. Brush tart pan with melted butter then sprinkles the buttered area with half of the sugar/cinnamon mixture. Peirce puff pastry with a fork to all steam to release.
  3. Roll out the puff pastry on a lightly floured work surface until you’ve rolled your puff pastry into a circular shape approximately 10-inch in diameter.  ( don’t throw away scraps you can use later)
  4. Toss apple slices with sugar/cinnamon mixture before arranging in an overlapping pattern on top of your pastry.  Start from the outside working your way to the center.  Brush the edges and apples with butter. Finally, sprinkle remaining sugar/cinnamon mixture on top along with a pinch of salt.
  5. Insert into oven and bake for 30 minutes, until apple slices feel soft when pierced with a tip of a fork or knife.
  6. Let cool and serve, slightly warm or room temperature.
